I felt the need to put my hand over my heart out of sheer joy as I toured UTC’s all- American inspired Draft Republic. Their motto “In Beer We Trust” is a bold statement backed by a truly flavorful experience.
If it’s fine dining you’re looking for, the food will surpass your expectations by a long shot. From all-American brews to exotic delicacies, this expansive and industrialized gastropub will meet your every need. Are you interested in playing pool, shuffleboard, or foosball…for free? Well, step right up. No quarters are necessary here.
As soon as you walk through the front door, you’re welcomed by a giant portrait of Honest Abe himself, complemented by a wall of lush greenery. What was especially impressive was the amount of space throughout the entire restaurant. You have the option of enjoying a roomy booth or a long communal table.
If you want to sit at the bar, no problem – it’s huge! If you are, in fact looking for a more intimate setting, have a seat in the lounge area near the bar. You can enjoy the romantic ambiance, and still be able to watch the game and order a burger. The spacious environment really caters to whatever dining experience you wish to have.
This place really is one-of-a-kind for giving guests everything they need in one location, ranging from family dinners and company parties, to a rowdy night out or fun first date.
While the atmosphere draws you in, the food and drinks are what keeps you coming back. To start, I asked my server, Danielle, for her cocktail recommendation. After my first sip of The Doctrine, a whiskey lovers dream, I realized that this restaurant isn’t stingy with their whiskey. The staff is incredibly knowledgeable and very well versed on their extensive cocktail and beer list.
To begin my dining experience, I sampled the Tuna Tataki, a crispy wonton topped with flavorful tuna, guacamole and cilantro. The next appetizer was a pleasant surprise…Moroccan spiced lamb corndogs! You’ll find that the majority of this patriotic menu has a bit of foreign flare. My dinner consisted of two meals that I would never order for myself, but I was so glad they were recommended to me.
First was the gluten-free Sausage Sampler, consisting of three house-made sausages packed with flavor. The sausages are paired with three different sides – sauerkraut, potato salad, and, my personal favorite, the apple slaw. Next up was the Draft Republic Burger. After the first bite, I knew it was one of the best burgers I have ever eaten.
My decision was confirmed in the bites to follow. The grass-fed beef, American cheese and homemade pickles may seem like a simple order, but this burger is far from plain. It would definitely be my first recommendation to my fellow carnivores.
Typically, people go big for appetizers and entrees and wave away the dessert menu. I strongly urge you not to. After your dinner, take a break, play a game of pool, and please, for your own good, order the homemade Espresso Butter Cream Doughnut. Need I say more? Draft Republic has one of the most unique dessert menus I have ever encountered at a gastropub.
